Camino Day 17: Burgos Easter Rest Day!

Impeccable timing to have a rest day in Burgos on Easter Sunday, and this Easter was one for the books!

I can’t think of a better way to start Easter than with mimosas on the balcony of a sweet Airbnb in Spain.

Mimosas were followed by cooking in the kitchen. It was a team effort as we prepared our brunch… scrambled eggs, guacamole, fruit salad, bacon, cheese, strawberries, chocolate, bread, whipped cream, pancakes.

I mean… it doesn’t get any better than eating banana pancakes while listening to banana pancakes & reminiscing and laughing about the shenanigans from last night. We were slow and hungover, but we thoroughtly enjoyed this sumptuous spread. (Well, the 4/5 of us who could get out of bed did… Sorry Tash! Haha)

In the afternoon, after a nice balcony nap, I mustered up enough energy to walk around the church in Burgos. (Seems like a pretty Easter-y thing to do.)

Hanging and chatting in the plaza. More balcony time. Dinner with a mix of old and new pilgrim friends.

Holidays tend to inspire gratitude for me, and I have so much to be grateful for today… Fantastic company and conversations, great food, balcony time, sunsets in a new city.
